Chocolate Chip Muffins

2 cups flour
1/2 cup white sugar
3 tsp baking powder
1/2 tsp salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
3/4 cup chocolate chips (mini is better)

Preheat oven to 400 degrees. Mix all dry ingredient (including choc. chips) in one bowl. Beat wet ingredients in another. Mix wet and dry together all at once. Stir. Batter will be a little lumpy. Cook in greased muffin pan for 20-25 minutes for standard muffins, 10-15 minutes for mini muffins. They look a little white on top, just check 'em with a toothpick.

I just tried these today and I am very please with them. They are moist, delicious and SUPER fast. I was considering putting some cinnamon in the batter, but I did not. Make, and enjoy!
(I really do apologize for the poor picture quality. Our camera isn't great, but decent. I think the real problem lies in the person holding it. I bet if Jon took pictures, they would be a bit better.)

No Bake Cookies

Seriously? I haven't posted this?? That's just sad, well here is my No bake cookie recipe. In which I LOVE!

1 3/4 cup white sugar
1/2 cup milk
1/2 cup butter
4 tablespoons unsweetened cocoa powder
1/2 cup peanut butter (I like creamy)
3 cups quick-cooking oats
1 teaspoon vanilla extract

Also if you are feeling adventurous I have added a little nutmeg and cinnamon to this in the past. I don't have amounts, because I never measured. I want to say it was like 4 tsp cinnamon and 1 tsp nutmeg...but please don't quote me on that.

In medium saucepan, combine sugar, milk, butter and cocoa powder. Bring to boil, and cook for 1 1/2 minutes. Remove from heat and stir in peanut butter, oats and vanilla. Put spoonfuls onto wax paper or sprayed pan. Let cool until hardened.

Crock Pot Hamburger

So this recipe was simple yet delicious. I was angry that day so making a crock pot meal so I wouldn't have to do anything that night made me feel way better. (Even though Jon was feeling sick that night so he didn't eat much...)

1 pound hamburger
4 potatoes cut into pieces
Lots o Carrots!
Brown Gravy mix
Onion flakes
I want to say some Italian Bread Crumbs...
And of course a bit of water

Combine, cook for 6 hours.

This meal was easy and when served with my breadsticks so all in all, delicious! I love that you can never really mess up a crock pot, there will be pictures of this one to come. Wahoo! Sorry I fail at blogging. That is also because I fail to find the energy to cook. :)
