Ranch Oyster Crackers

1 package oyster crackers
1 (1 oz) package ranch dressing
1/4 cup canola or vegetable oil
1/2 t garlic powder
salt

Combine all except crackers, mix. Mix in crackers, pour on baking sheet. Bake at 250 for 15 minutes, stirring every 5 minutes or so. Let cool and enjoy!

This is our new favorite snack! Easy, cheap and DELICIOUS!

Grilled Pizza Sandwich

So I wanted a sandwich today but didn't want just a boring normal one. So I did grilled pizza sandwich!

2 pieces bread
Butter
Spaghetti Sauce
Pepperoni
Cheese

Spread butter on outside of bread, spaghetti sauce on inside. Cheese on both sides, pepperoni in the middle, grill. Yummy! Jon and I certainly enjoyed it!

BBQ Chicken

3 pieces frozen chicken
3/4-1 tub BBQ sauce
little bit of worchestshire sauce
Sprite, however much you want
1/2 cup ish of Brown Sugar
Carrots

Put in Crock pot for 6 hours. (I did it for 4 hours and think it needs more time. The measurements may be a little off on this, I don't always measure when I cook. I combined it with some rice for dinner though and it was great!!!!!)

Blender!


So I got surgery. Hence the absence. Anyway, since i'm not cooking I don't really have much to blog about. BUT on Black Friday we got a blender. Our first blender! It is SO amazing! First thing we made was pear and banana mixed with ice and apple juice. Yum. We forgot to peel the pear though. So that wasn't too cool. Next we made some strawberry with mango and apple juice. We peeled the mango. Who knew they were so freaking huge?! Anyway, so far, loving the blender. I can't wait to create new and possibly disgusting things in it. It will be great! :)

Sweet and Sour Meatballs

This is a recipe the beautiful Caitlin Spratling gave me from the Wide Ward Cookbook. Oh wow. These are amazing! She deserves like 10 golden stars for sharing this. Seriously.


Sweet and Sour Meatballs

Meatballs:
2 lb lean ground beef
1 C rolled oats
2 eggs, slightly beaten
2/3 C onion, finely chopped (or 1/4 C dehydrated onion)
1 1/4 tsp salt
few grains pepper
1 1/2 tsp worcestershire sauce
2/3 C milk

Sauce (I like to 1 1/2 this):
1 C brown sugar
1/2 C vinegar
2 tsp prepared mustard
1/2 C bbq sauce
2 tsp worcestershire sauce

Combine meatball ingredients and form into balls about 1 1/2 inches in diameter. Place in casserole dish in a single layer. In a bowl combine the sauce ingredients, mix, then pour over the meatballs. Bake at 350 degrees for 30 min. Serve over rice.

I am getting surgery next week so we made a whole bunch and froze them so we can have them for later. The sauce is SO good! We did it without the mustard, and doubled the sauce. So I would suggest doing that. I can't wait to eat these! Thanks Caitlin!

Fail

This isn't a recipe. This is a recipe fail. I wanted to be all cute and domestic for my husband tonight. Ya, that didn't work. I combined a whole bunch of stuff in the crock pot, (ie:spices, pepperoni, butter, rice and beans.) Come to find out, the water was soaked up into the rice. And not the beans. And I think the beans being expired didn't help at all. So...it smelled great. The goodness stopped there though.

So IF that meal wouldn't have sucked so bad, I would have had a new recipe for you all. I am HOPING to have a new one tomorrow though! Yahoo! Ps. We bought Arby's for dinner. And they forgot my bacon. So...a little of a dinner bummer tonight, but you all will have to be patient :)

Mashed Potatoes

Tonight I tried to add some extra stuff to bagged mashed potatoes to make it more delicious and I decided this:

Fake mashed potatoes are always disgusting. Make real ones.

So here is how I make my mashed potatoes:

potatoes
butter
ranch dressing
milk
salt

Boil peeled potatoes until you can squish them to the side of the pot, drain. Blend all these things together until it is a consistency you enjoy. DO NOT take the potatoes out of the potmuntil you are sure they are well squishable :)

I don't really measure that well with these. You just do however much you like. Let's say...

4 potatoes
1/2 a stick-3/4 stick butter
um...ranch dressing to taste
1/4ish cup milk (that one is very hard)
salt

That is all very relative. I apologize. What did we learn from today my friends??

Cake Pops

Okay. So before I say anything. This recipe is fun and delicious, but please go into it with patience and lots of time. :) Also keep in mind this was my first attempt and may not be the best way to do this. It's what I did though. And some of it was fun. But all of it was tasty :)

1 box cake mix
1/2-1 tub of regular sized frosting (I did cream cheese)
2 things almond bark or baking chips

Lollipop sticks
Styrofoam something

Bake your cake as you would normally, let cool. Tear your cake into little bits, like so. Make sure they are small. Chunks are no good.
Mix frosting in with bits. Roll in balls, put on very lightly sprayed cookie sheet. (It helps if you spray your hands with cooking spray. It gets pretty sticky.) Get a little bit of the coating and melt it, dip the end of the sticks in it, then stick in the balls so they are sticking straight up. (The coating helps the sticks stay in the cake balls.) Put in freezer for at least a few hours.

This is the part I couldn't do and ended up having my husband and some friends do. Melt the bark or chips either on stove or in microwave, dip balls in them. If the pan or bowl is too shallow you can get a spoon and kind of spoon it on there and twirl if so it looks all pretty. Stick in styrofoam to let coating set. I would suggest putting a towel under it incase it drips.

Do not let the coating cook for too long. It gets grainy, gross, unusable and frustrating. Also if you have too much coating on one cake ball, it becomes WAY too intensely sweet. Try to find a nice even medium.

Chocolate Chip Muffins

2 cups flour
1/2 cup white sugar
3 tsp baking powder
1/2 tsp salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
3/4 cup chocolate chips (mini is better)

Preheat oven to 400 degrees. Mix all dry ingredient (including choc. chips) in one bowl. Beat wet ingredients in another. Mix wet and dry together all at once. Stir. Batter will be a little lumpy. Cook in greased muffin pan for 20-25 minutes for standard muffins, 10-15 minutes for mini muffins. They look a little white on top, just check 'em with a toothpick.

I just tried these today and I am very please with them. They are moist, delicious and SUPER fast. I was considering putting some cinnamon in the batter, but I did not. Make, and enjoy!
(I really do apologize for the poor picture quality. Our camera isn't great, but decent. I think the real problem lies in the person holding it. I bet if Jon took pictures, they would be a bit better.)

No Bake Cookies

Seriously? I haven't posted this?? That's just sad, well here is my No bake cookie recipe. In which I LOVE!

1 3/4 cup white sugar
1/2 cup milk
1/2 cup butter
4 tablespoons unsweetened cocoa powder
1/2 cup peanut butter (I like creamy)
3 cups quick-cooking oats
1 teaspoon vanilla extract

Also if you are feeling adventurous I have added a little nutmeg and cinnamon to this in the past. I don't have amounts, because I never measured. I want to say it was like 4 tsp cinnamon and 1 tsp nutmeg...but please don't quote me on that.

In medium saucepan, combine sugar, milk, butter and cocoa powder. Bring to boil, and cook for 1 1/2 minutes. Remove from heat and stir in peanut butter, oats and vanilla. Put spoonfuls onto wax paper or sprayed pan. Let cool until hardened.

Crock Pot Hamburger

So this recipe was simple yet delicious. I was angry that day so making a crock pot meal so I wouldn't have to do anything that night made me feel way better. (Even though Jon was feeling sick that night so he didn't eat much...)

1 pound hamburger
4 potatoes cut into pieces
Lots o Carrots!
Brown Gravy mix
Onion flakes
I want to say some Italian Bread Crumbs...
And of course a bit of water

Combine, cook for 6 hours.

This meal was easy and when served with my breadsticks so all in all, delicious! I love that you can never really mess up a crock pot, there will be pictures of this one to come. Wahoo! Sorry I fail at blogging. That is also because I fail to find the energy to cook. :)

X Box Controller Cake

So for some friends birthday's we decided to do a joint dinner together and then I made a cake for the birthday men. My husband and them play Halo together a lot. So I thought that my cake was appropriate :)

I've seen some way better ones online, mines cool though. :) I did a chocolate cake in a 9 x 13 pan, cut it to look like a controller, frosted it with whipped butter cream frosting, let that set, put on a second layer, then put M & M's with the letters on them, reeses for all the darker controls and then the silver thing is an upside down and reshaped hershey's kiss. Altogether, I think it turned out great!

Daddy's Cherry Cobbler

As promised, this is my dad's phenomenal cobbler recipe. He usually does it in a dutch oven, I did it in an oven. (my sister just pointed out to me that I put crock pot. And not dutch oven...that was embarrassing. Sorry for the confusion.)

Cake Mix (Choc is what he does, we did Vanilla)
4-6 TBL butter
Brown Sugar
Pie Cherries
Egg Yolks
Cream
Choc chips, or special dark choc bar (We did white choc)

Melt butter in pan, pack brown sugar in the bottom for a sort of crust like feeling. Put pie cherries on top. Get the cake mix. If it calls for oil, put dark choc, if it calls for eggs, do egg yolks, if it calls for milk or water, do cream. Put the cake mix on top of the cherries. Cook at 350 until ALMOST done, about 5 minutes before it is done, poke holes in the top, stick the chocolate in it and put brown sugar on top. It will melt the chocolate and make it delicious! Ours didn't melt that well, it was my first time making it though. So hopefully it improves.

Let me know if you try this! I didn't eat it but I hear it was amazing! It smelled and LOOKED amazing as well! Sorry my picture doesn't show that so well.

Brown Sugar Meatloaf

So way back when I made this recipe for my sister and bro in law. I had it on my other blog, but wanted to put it on here :)

1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoon salt
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs

Preheat oven to 350. Lightly grease a 5x9 inch loaf pan.
Press brown sugar in the bottom of prepared loaf pan and spread ketchup over the sugar
In a mixing bowl combine the remaining ingredients thoroughly and shape into a loaf. Place on top of ketchup.
Bake in preheated oven for 1 hour or until juices run clear.

Muffin Pie

Okay. This is what it looks like. We didn't have a muffin tin so I used a pie plate. Surprisingly fun and they didn't crumble as much as muffins. And you don't get as much of the hard outside. I liked it :) So did Jon!



Triscuit Treats

Okay. So these are one of the most simple and delicious things ever.

Shredded Cheddar Cheese
Italian Bread Crumbs

Pretty much assemble them as you see here. They are way more delicious than you could think! At least I think so. Melt them in microwave for like 15-30 seconds.

Coffee Cake

8 Tbl butter
1 c sugar
2 eggs
2 c flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 c milk
1/2 tsp vanilla

Mix butter, sugar and eggs. Beat until creamy. Sift together flour baking powder and salt and add to sugar mixture alternately with milk. Add vanilla. Spread in a 9 x 13 pan.

Mix together 2/3 c brown sugar and 1 tsp cinnamon

Sprinkle mixture over batter. Dot with 4 Tbl stiff butter. Bake at 350 for 20-25 minutes.

Snickerdoodles

This recipe is phenomenal!! Courtesy of allrecipes.com and some lady names Mrs. Sigg :)

1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups flour
2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt
cinnamon sugar mixture

Cream together butter, shortening, sugar, eggs and vanilla. Blend in flour, cream of tarter soda and salt. At this point you may choose to cook, but I suggest refrigeration for about an hour or more. I like to do overnight.

Roll into balls, roll in cinnamon sugar mixture and bake at 400 degrees for 8-10 minutes. I like to do 8 minutes and then let them sit for a minute. Oh, and put them on a sprayed pan. It makes the bottoms softer as well. If you make these, drop a comment below and tell me what you think! Enjoy!

Meatballs #2

Okay, this doesn't have a picture because I was slightly lazy, but I haven't posted in FOREVER! And I apologize for that. Tonight I made some pretty great meatballs.

Beef (however much you want)
Vegetable flavored Ritz
Onion flakes
Egg (eggs if it's more meat)
A little milk
Seasoned Salt

Put in Skillet, turn until all brown and pretty and cooked inside.

Simple and easy. And delicious. We also had some Idaho Brand instant potatoes with this. Very fast and delicious meal.

Orange Ginger Scones

I promise I'm not dead! There was a combination of a DC trip and a severe lack of desire to be domestic. So there ya go. Well this recipe I made for a tea party we went to. I think they tasted great! Try them and let me know what you think.

2 cups all-purpose flour
2 T sugar
2 t baking powder
2 t ground ginger
1/2 t salt
1/4 t baking soda
1/2 cup cold butter, cubed
3/4 cup sour cream
1 egg
1-1/2 t grated orange peel

In a large bowl combine flour, sugar, baking powder, ginger, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Whisk sour cream and egg; add to dry ingredients just until moistened. Stir in orange peel.

Turn onto floured surface; knead 8-10 times. Divide dough in half. Pat each portion into a 7-in. circle; cut each into 6 wedges. (Not sure why, but cutting it into wedges was very hard for me. I felt like I should be able to make 3 or 4 swift cuts and i'd be done. Then Jon told me to just cut wedges then form the rest of the dough. Haha!)

Seperate wedges and place 1 in. apart on ungreased baking sheets. (I put flour on the bottom of the pan, that is not necessary though.) Sprinkle top of scones with sugar. Bake at 400 degrees for 10-12 minutes or until lightly brown. Serve warm. (With butter. Lots and lots of butter. Okay, you don't have to. Butter improves everything though right?!)

Yields: 1 dozen

Crescent Breadstick things

Man. I have issues actually keeping up with this blog. Is it still a good idea? Hm....anyway. Yesterday for dinner I made my own little creation.

Fridge Crescent rolls
Parmesan Cheese
Butter
Garlic Salt

To be, this seems pretty self explanatory. Put the butter on, Cheese(be generous with it) and Garlic salt, roll up and cook as usual. I like the butter flavored rolls. So try it out and let me know what you think! Jon and I think they taste like cool little breadsticks :)

Oopsy

Okay. I feel as if I need to explain my absence's. I am married. With a child. Cooking doesn't always happen like it should. Many dinners end up being cereal, sandwich's or the wonderful "fend for yourself" meals. I'm not great at making sure a real dinner is on the table. And i'm also pretty poor at using new recipes. I tend to cling to what I know. So this blog is almost a little depressing at times, but I will honestly try to keep it going as well as I know how. Besides, it is nice to have a blog here if I ever decide to actually feed my husband. We'll see. :)

Eyeballs and Crayon Cake Picture

It is almost embarrassing to have this blog. Now everyone knows how little I actually cook. Oh well. I told myself I would have this blog, so now I will keep it! I am trying to be determined.

I thought I would post 2 pictures of some of my more creative bakes. This first one is of my eyeballs I made for Halloween. The recipe is here. They are ridiculously delicious and rather time consuming. Fun though!!
This is a cake I helped my cousin Angela make for his birthday...2 (?) years ago. It was a lot of fun. A cake, some ice cream cones and lots of frosting :) Not really a recipe for this. Just lots of boredom and creativity.

Egg in Toast


Okay, so this isn't anything special. (Sorry. I haven't been in a baking mood lately. So keeping this blog up is actually real hard.) This is just a simple egg in toast I made the other day. Get bread, cut circle in it with cup or cookie cutter, butter both sides, put egg in middle, cook. So easy right?! I usually scramble my egg up a bit while it's in there, and add salt. My favorite part is actually the middle piece of bread. Not sure why. This is so easy! I love brainless recipes :)

Chocolate Chip Cookies


1 cup butter
1/2 cup white sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 1/2 to 3 cups flour (Depending how you like them)
1 teaspoon baking soda
1 teaspoon salt
2 cups semi sweet chocolate chips

Preheat oven to 375. Cream together butter and sugars until smooth. Beat in vanilla and eggs one at a time. Combine the flour, baking soda and salt, stir into the sugar mixture. Finally, mix in the chocolate chips. Drop by spoonfuls onto ungreased cookie sheets. Bake for 8-10 minutes.

Admittedly, this isn't the best recipe in the world. It was most likely my fault though. I did like 3 1/2 cups flour. So they were just really thick. Haha! But really, it is great. I just haven't found that perfect recipe for this yet. If you try it and like it, let me know and drop a comment below!!

Breadsticks


So I make these things often and with many recipes. So I thought they deserved their own post.

1-1/4 cup flour
2 t sugar
1-1/2 t baking powder
1/2 t salt
2/3 cup milk
4 T butter of margarine, melted
Parmesan Cheese
Garlic Salt

In a small bowl, combine flour, sugar, baking powder and salt. Gradually add milk and stir to form soft dough. Turn onto a floured surface and knead gently 3-4 times. Roll into a rectangle; leave breadsticks slightly thick, cut into 12 breadsticks. Put little slits in the top so the Parmesan seeps in a little. Place butter in square pan. Put breadsticks in the butter and turn to coat. Sprinkle with cheese and light garlic salt. Bake at 450 degrees for 12-18 minutes or until golden brown. Serve warm.

Spaghetti & Meatballs

Okay. So this isn't exactly a recipe. I was real proud of me actually making a full meal tonight though. So I was proud. Tonight I made Spaghetti & Meatballs and my breadsticks. I used Linguine noodles and Prego Veggie Smart sauce for that. And my meat balls I did 1/2 a pound of meat, an egg, saltines, chopped garlic and Italian seasoning. It needed salt. I've never really attempted meatballs before. So this was interesting. All together it was great though!

Oatmeal Chocolate Chip Cookies

1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2-3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 3 cups quick cooking oats
  • Normal bag of Chocolate Chips

Mix together butter, sugar and brown sugar. Beat in eggs and vanilla. Add flour, baking soda, salt and cinnamon. Mix in oats and chocolate chips. Cook at 375 for 8-
10 minutes.

Muddy Buddies


So clearly I didn't make this recipe up myself, but I love to make and eat these, so it deserves to be posted. Even if you already know the recipe because it's on the box.

Chex Muddy Buddies

9 cups Chex (I prefer corn)
1 cup semi sweet chocolate (Nestle)
1/2 cup peanut butter (Jif)
1/4 cup butter/ margarine
1 t vanilla
1 1/2 cups powdered sugar

Measure cereal into large bowl, set aside.

Microwave Choc chips, peanut butter and butter uncovered for 1 minute. Stir. Put in for 30 more seconds or until smooth. Stir in vanilla. Pour mixture over cereal and mix until well coated. Put 1/2 of it in a gallon size bag with powdered sugar and shake it. (Like a polaroid picture...) Do again for other half. (You can do 2 gallon size bags. But I enjoy splitting them up.) Put on wax paper or lightly sprayed pan to cool. Store in airtight container in fridge.

Emmy's Crock Pot Chicken


This is the meal I make every Sunday. So incredibly easy and I love it!

3 pieces of boneless skinless chicken breast

3 or 4 medium potatoes cut up and peeled

10-20 carrots

1 can cream of chicken soup, 3 cans of water

1 packet Lipton onion soup mix

Put all in crock pot and mix up a bit. Set for 6 hours.

What Jon and I always do for this meal is I make the Rhodehouse rolls. They just set up while the food is in the crock pot, put rolls in half an hour before the crock pot ends. That's about it! Hope you use it! I love it!


Navajo Fry Bread


This is what I had for dinner tonight. Jon didn't. He wasn't hungry. Delicious though!

4 1/4 c. flour

1 T baking powder

1tsp salt

2 T powdered milk

1 1/2 c warm water

Vegetable oil for frying

Mix dry ingredients in large mixing bowl. Stir in warm water. Mix and knead with hands for about 5 minutes, until soft dough forms. Let stand about 1/2 hour. Pinch off nice size piece; roll then pat and spread until scone-like. Put in frying pan and fry. (It goes pretty fast, so keep an eye on it.) I put honey butter, cinnamon sugar or powdered sugar on it. If you warm them up a bit in the morning and put jam/jelly on it, also great! Makes...20ish? I think

French Toast


So I know that some of my recipes may be very basic and obvious, but this isn't to impress people. This is something I want to do for me. Show myself that I have talent in this area and record the things I think about the meals I make. Tonight's dinner:

French Toast

2 large eggs
1/4 cup milk
a little vanilla
cinnamon

Mix together and then dip bread in it. Cook on griddle or pan on oven.

We use the Hearty & Delicious Sara Lee bread. SO good :) This makes about 6 pieces of toast. Try it out and let me know how it goes! Man, this would have been great with some bacon.

(I would have gotten a picture of the whole thing, but it was so delicious so I just had to start eating. Sorry :)

Chicken Crescents

Finally made them! So I added pictures :)

Chicken Crescents

6-8 ounces cream cheese (I like 8)

¼ c butter

2 cups chicken

a little pepper

can or 2 of crescents

Italian Bread Crumbs

Boil and cut up chicken. Mix chicken, cream cheese and butter. Roll in melted butter and Italian bread crumbs. Cook at 350 until brown and pretty. I honestly don't know minute wise. 15 sounds right ish. ;)

They are great if you pour cream of chicken soup on them or they are great by themselves.

Hamburger & Rice


So tonight is one of those meals that is totally unfair for me to post. We get our beef from my dad's farm. Not processed, organic, delicious beef. So if you try this meal and it isn't up to snuff, that's why. This is what I make when Jon and I want hamburger, but really don't want to spend too long cooking.

1/2 pound hamburger
1/2 cup rice
Seasoned Salt
Chow Mein noodles

Brown beef, cook rice, combine all and enjoy. Perfect for 2 people.

Short eh? I love it. When I cook with this meat I actually don't drain it. The juices make the flavor so great!!

RItz Chicken

Well tonight we are having Jon's physics buddy and his wife over for dinner. I decided to make one of Jon and my favorites.

Ritz Chicken

3-4 chicken breasts
1 can cream of chicken soup
1 cup sour cream
1/2-1 cup cheese (we used sharp cheddar)
2 tubes Roasted Vegetable Ritz crackers, crushed
1 cube butter

Place chicken in a pot of water with some salt and pepper. Bring to boil and then turn down low for about an hour. Take chicken out and cool it enough to handle it. Shred chicken into thin shreds, or else you can cut up into bite size pieces. Put chicken in a 9x13 dish, sprayed with Pam spray. Mix soup, sour cream and cheese then mix in with chicken. Melt butter and add crushed crackers. Sprinkle on top of stuff in pan. Bake at 350 degrees for 30 minutes.

I am very excited for tonight. This is a great recipe. We usually serve it over some rice. That is the best way to do it. And if you want a good side do some corn or maybe rolls. It's pretty filling though. So not a whole lot is needed. Oh...I should have gotten salad. That sounds delicious. Oh well :) Hope ya'll like this one!

Pizza Soup


So a friend of mine, Ris Ratliff, told me that I should start a blog of recipes. Upon pondering such an endeavor, I thought it sounded pretty awesome. I love to cook and also love to share with people how much I love to cook. So here is my delicious blog!


There is no real start to my favorite recipe, I have so many. So tonight I will start with what Jon and I had for dinner.

Quick Pizza Soup

1 pound ground beef
2 cans condensed tomato soup, undiluted
6-1/2 cups water
1 jar spaghetti sauce (Prego 3 cheese is great)
1 T Italian seasoning (Italian bread crumbs also work)
Cheddar Cheese

Brown beef, drain. Add soup, water, spaghetti sauce and Italia
n seasoning; bring to boil. Reduce heat, simmer, uncovered, for 15 minutes. (Stirring every 5 makes me feel better) Add desired amount of cheese. Small handful works well.
